Buffalo Chicken Pasta
So there is this awesome girl I know, her name is Leeanne, she is my Partner-in-
Crime Cooking (P.I.C), and she makes a mean Buffalo Chicken Dip!
A few years ago, I was introduced to her amazing Buffalo Chicken Dip at a work function. Umm.. Umm.. DELICIOUS!!! The first thing that came to my mind was, “Where have this recipe been all my life?!?!” We love sharing recipes with each other, so naughty her for taking so long to introduce me to this goodness. lol Then, she told me how easy it was to make and I couldn’t believe it. Just a few ingredients (can chicken, cream cheese, buffalo sauce, cheese and her special touch) and that’s it! Therefore, I had to go home and try it.
After making it couple time, I started to add my touch to it (basically, how can I add more spice?! Just Kidding!) Then, I thought to myself… “How can I make this into a meal instead of just an appetizer?” HUMMM…………… PASTA!
Buffalo Chicken Dip turned Buffalo Chicken Pasta
Buffalo Chicken Baked Pasta
- 1 box Pasta (elbow or penne)
- 1 Can Chicken
- 1- (8 oz. pkg.) Philadelphia Jalapeño Cream Cheese
- 1/2 cup Milk, more if needed
- 1/2 cup sour cream
- 1 cup Frank’s Buffalo Wing Sauce
- 1- (8 oz. pkg.) Cheddar Cheese, shredded
- 1/4 cup Ranch or Blue cheese, your choice (optional)
- Ground Black Pepper; pinch to taste (optional)
- Salt; pinch to taste (optional)
- Cooking Spray
Preheat oven to 350°F.
Coat 9×13 inch pan with cooking spray,
Bring a large pot of salted water to a boil. Cook the pasta as instructed on the box, drain, and set aside.
Meanwhile, in a large pan over medium heat, combine the can chicken (shred while cooking), jalapeno cream cheese, sour cream, buffalo wing sauce, and ranch together. Taste, and season with salt and pepper if needed.
Add milk and some cheese and stir until melted and mixed well.
Combine the buffalo chicken mixture and the cooked pasta together and stir until well merged (add more milk if needed).
Pour the mixture into the baking pan, sprinkle the rest of the cheese on top.
Bake in oven for 25 to 30 minutes, or until brown on top; (or broil on 400°F for 2-3 minutes for browning).
Cool for a couple of minutes before serving.
